Love a Chopped Salad

I love a good salad.  I will serve my family salad almost every night of the week so it's so easy to get tired of the same old combo.  I think a good chopped version is a great alternative.  Take your favorite ingredients like romaine lettuce, cucumber, red pepper, yellow pepper, carrots, red onion, black olives, tomato and chop them all very small.  Combine some cooked white or garbanzo beans.  Top with a homemade dressing of red wine vinegar and olive oil.  Serve with some parmesan bread slices (bake day old sliced french bread drizzled with olive oil and shaved parmesan until golden) and a grilled chicken breast and what an easy break from the old routine!
