Fall in Love with Quinoa

This is a food worthy of your love.  Pronounced keen-wah, quinoa was once called "the gold of the Incas" because it was believed to increase the stamina of Incan Warriors. (How I get my five year old to eat it.) Quinoa has a light, fluffy texture and a mild, nutty flavor.  You can use it in place of rice or couscous.  Quinoa is extremely nutritious seed, high in protein (supplying complete protein meaning that it includes all nine essential amino acids).  This great seed is easy to digest and contains no gluten, and is also a good source of dietary fiber, phosphorous, magnesium and iron.  Bonus: It's very easy to cook - mix one part quinoa to 2 parts water for 20 minutes.  Enjoy it alone, with mixed vegetables or in casseroles.  Get more information and order organic quinoa here.
